Fresh Linguini with Shrimps, Zucchini Flowers and Olive Oil Sauce

Ingredients:
300gms Linguini
6 female zucchini flowers (separate)
100gms shrimps (chopped)
1 onion (diced) 2 cloves garlic (crushed)
1 tbs thyme (chopped)
¼ cup Toscana Olives Organic Cold Pressed Extra Virgin Olive Oil
1 lemon (juiced)

Method:
- Prepare zucchinis, separate zucchinis from the flowers.
- Slice the baby zucchini into small rounds and marinate in the crushed garlic & a splash of olive oil for 30mins.
- Slice zucchini flowers into quarters.
- Bring water to boil add salt, slide pasta gently into pot.
- Freshly made paste will take about 3-5 mins to cook, Dried pasta will take around 5-8 mins to cook.
- Sweat off onions in the remaining olive oil, add shrimps & Zucchini, sauté slowly until just cooked.
- Toss in hot pasta, thyme, zucchini flowers, lemon juice and season with salt /pepper
- Serve.
