Christmas Roast Turkey Recipe

This Christmas Turkey Recipe serves 14-16

Recipe Ingredients

16 lb Turkey
Toscana Olives Olive Oil
1/4 teaspoon Salt
1/4 teaspoon Pepper
Turkey stuffing (recipe below)
 
Remove giblets and neck from turkey; wash, and set aside.
Wash turkey thoroughly inside and out. Pat dry with towels. Remove any excess fat.
Prepare dressing. (Stuffing recipe below)
Preheat oven to 325F.  
Spoon some of dressing into neck cavity of turkey. Bring skin of neck over back; fasten with poultry pin.  Spoon remaining dressing into body cavity; do not pack. Insert 4 or 5 poultry pins at regular intervals. Lace cavity closed with twine, bootlace fashion and then tie.
Bend wing tips under body, or fasten to body with poultry pins. Tie ends of legs together. Insert meat thermometer in inside of thigh at thickest part.
Place turkey on rack in shallow roasting pan. Brush with Toscana Olives Organic Extra Virgin Olive Oil; sprinkle with salt and pepper.
Roast uncovered and brushing occasionally with olive oil and pan drippings for about 4 hours, or until meat thermometer registers 185F. Leg joint should move freely.
When turkey begins to turn golden, cover with a square of olive oil soaked cheesecloth or a loose tent of foil, to prevent burning.
While turkey roasts, cook giblets and neck.
Place turkey on heated serving platter. Remove cheesecloth or foil, twine, and poultry pins. Let stand 20 to 30 minutes before carving.
Make gravy.

Approximate baking time is 18 minutes per pound.

Basic Bread Stuffing

1/4 cup Toscana Olives Olive Oil
1/4 cup butter
1 Large onion, diced
1 to 2 cups diced celery w/leaves
15 cups  Toasted 1/2-inch bread cubes
1 1/2 teaspoons salt
1/4 teaspoon black pepper
1 tablespoon dried sage
1/2 cup  chopped parsley
1 cup turkey stock, water, or milk

Add olive oil and butter to a large stockpot. Add onion and celery and cook until vegetables are tender but not browned. Add to bread cubes in large bowl. Add salt, pepper, sage, and parsley and toss until well mixed. Add turkey stock and blend well.

Christmas Roast Turkey Breast With Rosemary, Garlic & Olive Oil

Recipe Ingredients

1 Skinless turkey breast, boned
2 Garlic cloves, cut into slivers
1/2 teaspoon Dried rosemary
3 tablespoons Honey
2 tablespoons Toscana Olives Lemon Pressed Olive Oil
1/2 teaspoon Pepper
Rosemary
1 tablespoon Dijon mustard
1 tablespoon Lemon juice
Salt to taste


Trim any fat from the turkey. Make small slits in top of breast and
insert garlic slivers and rosemary. (If you don't have any fresh
rosemary, add dried rosemary to the honey mixture.)
In small bowl, combine honey, mustard, lemon pressed olive oil, lemon juice and pepper.
Brush all over turkey breast. Sprinkle with salt.
Place turkey in baking dish, meaty side up. Roast at 350 F for 45
to 60 minutes, depending on size of turkey breast. Baste every 10 to 15
minutes until done. To carve, slice turkey meat off bone on diagonal.

Christmas Roast Turkey With Grapes & Prunes

Recipe Ingredients

1/4 cup Toscana Olives Extra Virgin Olive Oil
Paper bag
10 lb Turkey, whole
6 cup Dry corn bread, crumbled
2 tsp Thyme
2 tsp Sage
2 tsp Minced parsley
1/4 cup Port
1/2 cup Prunes, pitted & chopped
1/2 cup Green seedless grapes
1 cup Diced apples
1 cup Minced onion
1/4 Stick unsalted butter


Preheat oven to 350 degrees F. Lightly oil inside of a large,
unprinted paper grocery bag. Wash and pat turkey dry.
In a large bowl mix corn-bread crumbs with thyme, sage, and
parsley. Set aside.

In a saucepan over medium heat, simmer port, prunes, grapes, and
apples for 15 minutes. In a skillet over medium-high heat, saute
onion in olive oil until soft but not browned (8 to 10 minutes). Add fruit
mixture and sauteed onion to bread crumbs and mix well.
Stuff cavity of turkey with bread stuffing. Lace opening shut with
kitchen twine. Dot exterior of turkey with small pieces of butter.
Place turkey inside prepared sack, roll opening of sack to seal
tightly, and place sack in a large roasting pan. Place in oven and
roast for 2 1/2 to 3 hours. During the last 30 minutes, tear away top
of bag to let exterior brown. To test for doneness, pierce a leg with
the tip of a sharp knife. The juice should spurt out a clear yellow;
if it is pink, roast the turkey for 10 to 15 minutes longer.

Note: If you are concerned about chemicals in the paper of the bag,
you may want to line the bottom of the bag with aluminum foil or a
rack.
